We are so excited to share this challenge with you all and hopefully create excitement about Vegging Out! But first, let us explain why this is so important.
A poor diet and low vegetable intake is linked to poor health in the UK and preventable diseases such as heart disease, type 2 diabetes and cancer. It has also been associated with depression and weight gain.
We want to change this, with these 30 recipes to help increase your veggie intake over 30 days! This plan will focus on reducing food waste and reusing lots of leftover ingredients to provide you creative new ways to develop meals.
This is not a strict or rigid plan. It does not involve calorie counting and is not focused around a vegetarian or vegan diet - unless you want to of course. It simply aims, to help you to reconnect with portion sizes and seasonal veggies in a new way to optimise your overall health.
Backed by a variety of health professionals, dietitians and nutritionists such as renowned cardiologist Dr Aseem Malhotra, Nutritionist Dale Pinnock and the Association of Nutrition, as well as, Sports athlete Victoria Pendleton CBE, Food Foundation Veg Power and food companies such as Abel& Cole.
