Alicia Rountree's Tarte Tatin Recipe
If you listened to our recent podcast episode with model and entrepreneur Alicia Rountree, you would have heard her mention her favourite comforting dish to create. Something sweet and home cooked, Alicia loves a simple apple tarte tatin. As promised, we wanted to share this recipe with you! Like Alicia, serve with vanilla ice cream and enjoy.
Ingredients
100g sugar
50g butter
1kg apples
1 Puff pastry
Method
To prepare the caramel, place the diced butter in a saucepan, then pour over the sugar. Cook over low heat for 5 minutes without mixing much, the caramel pretty much done by itself, make sure it doesn’t burn.
Place the caramel at the bottom of a pie dish.
Add the apples cut into large cubes, then cover with the shortcrust pastry. Make a small hole in the middle of the pastry to let the steam out while cooking.
Bake for 25 minutes in the oven at 210 ° C.
Serve warm with a scoop (or two!) of vanilla ice cream or creme fraiche.
